And, of course, me!
This week we are departing from pumpkins and entering into the world of….breakfast!
Don’t forget there is more to come and also a link up!
Come back each Wednesday as we reveal five different foods that are purported to support your immune system in the fight against the cold and flu viruses that run rampant this time of year. What’s more, each post will be opened up to all our readers, who will be linking up their favorite recipes with these key flu-fighting ingredients, so you can get lots of ideas for creative ways to serve them to your family!
Don’t run out of the house without your breakfast!
Research shows that people who skip breakfast are less likely to skip getting sick! Looks like your mom was right when she said “Don’t forget to eat your breakfast!” Whether you grab a quick Pumpkin Smoothie and drink it on your way, or sit down to eat a nice bowl of homemade Peanut Butter Cereal, you need to eat something.
The main reason? Stress! People that are stressed tend to not eat breakfast and don’t give their body the time to rest! If you are stressed, you are probably rushing. Set your alarm clock for 10 minutes earlier (that is all it takes to make these oats!) Voila…you have breakfast! Not to mention, you are arming your body with nutritious ingredients that will boost your immune system! Source
{Recipe} Sweet Apple Steel Cut Oats
Ingredients:
- 1 cup steel cut oats
- 2 1/2 cups water, divided
- 1 Tablespoon apple cider vinegar, whey, lemon juice
- 1 apple (granny smith, gala, whatever you have on hand), grated
- 1/4 cup sucanat (or brown sugar)
- 1 teaspoon cinnamon
- smidge of salt
- 2 Tablespoons of coconut oil or butter
- Stovetop: Combine oats and 1 1/2 cups of warm filtered water, plus apple cider vinegar in a medium sized pan (2.5 qts). Cover and soak 7 hours to overnight. In the morning, add remaining 1 cup of water (or make it milk for more creaminess) plus the grated apple, sugar, cinnamon and salt. Bring to a boil, turn to medium-low and simmer until liquid is absorbed, about 10 minutes. Add more water if necessary to complete the cooking (altitude AND time soaking affect this process). Stir occasionally to prevent from sticking. Stir in desired amount of coconut oil and serve!
- (Hands off!) Rice Cooker: Soak oats as mentioned above. Add all ingredients to rice cooker. Turn to “Brown Rice” setting. Forget about it. (Thanks Jenny for the idea for this recipe AND the rice cooker!)
- Yield: Just shy of 4 cups

Each of us hosts are picking our favorites from last week….my favorite three are (in no particular order):
**Pumpkin & Spinach Macaroni and Cheese from Fat Girl trapped in a skinny body. Oh.My.Goodness this looks amazing!
**Pumpkin Syrup from Megan’s Cookin’. I sure do love my coffee shop coffee but don’t buy anymore (unless I splurge). Have to try this!
**Pumpkin Chowder from Newlyweds. I can’t believe there are so many ways to make pumpkin soup…this one may top the list!
I sure hope the three of you (and all the others that I wanted to include, but couldn’t) link up a breakfast recipe!
Now it’s your turn! Link up your delicious breakfast recipes below.
There are only two guidelines for participation:
1. Your recipe must be suitable for breakfast. Any entry submitted that is not suitable for breakfast will be deleted.
2. Please link your posts back to one of the hosting blogs. This way your readers can have access to all of the other great breakfast recipes as well!
Don’t forget to subscribe to my blog so you can remember to come back for the rest of the series!
This recipe was happily shared at some fan-tabulous sites: Works for me Wednesday, Healthy 2Day Wednesdays, and Women Living Well Wednesdays, Homestead Barn Hop

I’ve only ever made steel cut oats in the crock pot. I’ll have to try this recipe, especially with the apple flavors!
I WILL be trying this recipe, Nikki! I have only made steel cut oats once before and that was last week! I have a whole jar full of them, and your recipe looks like the perfect way to use them up!
Cute picture, by the way!
I finally made these last weekend and they were great! My dad and my sister were here, and they both loved them. They had never had steel cut oats before, but they thought that they were delicious. Thanks for the yummy recipe!
Thanks for letting me know…I love feedback!
Looks like a pretty easy recipe, especially if you gather all you need the night before you make this. I know eating some oats in the morning would be easy for me to add to my morning routine. Thanks for sharing!
We often eat steel cut oats for breakfast but it can get a little boring. Thanks for sharing a new way to dress it up!
