This so happens to be one of our family’s favorite breakfasts. The smell of cinnamon and coconut – and the creamy goodness of the milk. This is dairy free and gluten free, due to my family’s eating needs. You can easily make this “dairy-full” but I must say, the taste of this recipe is not missing any flavor (in my opinion!).
Creamy Rice Breakfast Cereal
Ingredients:
1 cup rice
1/2 cup water
2 cups milk (almond, coconut, rice or dairy)
1 teaspoon cinnamon
2 Tablespoons sucanat
1/4 raisins
1 T coconut oil, or butter
pinch salt
splash vanilla
Method:
Add all ingredients. Stir. Bring to a boil. Simmer 15-20 minutes.

















Is this uncooked rice or leftover rice? Have you ever tried soaking the rice beforehand or do you find that necessary? Looks delicious!
This is uncooked rice. I gave up soaking rice as I found no difference in digestibility personally. But I do still soak grains (when I use them).
Thanks, Nikki! We don’t each much rice, so I haven’t been able to tell a difference, but I’ve read it’s one of the easiest to digest unsoaked (good reason to use brown rice pasta). I’ll let you know when we try this. My little man has become very picky, so we’ll see how it goes! : )

Does it matter if you use brown or white rice, the recipe does not specify?
This is for white rice but brown would be great. Just takes longer!
